Rockfish is the fish we catch most and cook most. It is mild, flaky and takes bold spice well, which makes it great for curries, tacos, fried fish, musubi and laksa.

How we handle it

Bleed and ice it on the boat

A quick bleed and a cold slush keep the fillets clean and firm.

Match the cook to the fillet

Thin fillets fry and pan sear fast. Thicker pieces hold together in curries and broths.

Save the frames

Heads and frames make a quick fish stock for curry, laksa or soup.
