The story
This is my take on a classic Hawaiian musubi, but instead of Spam, we’re using fresh rockfish, ground and spiced, then shallow-fried until golden. It’s bold, portable, and packs flavor into every bite. Inspired by the ocean, grounded by the pantry, and perfect for days when you want something quick, filling, and just a little different.
Method
Grind or mince the rockfish, keeping some texture.
Mix with the potato flour, salt, black pepper, Aleppo and poblano powder until sticky.
Shape into Spam-size patties with a musubi mold or your hands.
Shallow fry over medium about 2 minutes per side to 145°F. Rest.
Press warm rice into the mold, add a patty, press again, and wrap with nori.
Serve warm, room temp or chilled.
Notes
- Smoked paprika can stand in for poblano powder.
- Good with quick pickled cucumbers and a cold beer.
