Dungeness Crab Recipes
Every December we pull crab pots out of the Bay Area, and most of that crab ends up in these recipes: crab curry, crab pulao, garlic roasted crab, crab tikki, crab dip and plenty more.
If you just came home with a sack of Dungeness and don't know where to start, start here.
How we handle it
Cook the whole haul, freeze the extra
Cook your crab the day you catch it, while it's still alive. When we come home with more than we can eat, we steam or boil it all, then vacuum seal the crabs whole and freeze them. Months later they're ready for curry, pulao or crab dip.
Clean before you cook for curries
Pull the back shell, scrape out the gills and guts, and rinse. You get cleaner flavor and the sauce gets into every piece.
Save the crab water
Keep the water you steam or boil crab in. It is a ready-made stock for pulao, bisque and rasam.
