Yellowfin Tuna and Yellowtail Sashimi

Caught in the morning, on the plate by lunch. Yellowfin is rich and buttery, yellowtail is lighter and a little sweet. Slice them side by side and taste the difference.

Serves4

Method

  1. Use a very sharp knife, ideally a yanagiba or sashimi knife.

  2. Slice against the grain at a 45 degree angle, about 1/4 inch thick.

  3. Serve right away with soy sauce and wasabi.

Notes

  • Keep the fish on ice from the moment it's caught and slice it cold.
