Lobster Xacuti
A legal keeper lobster pulled from cold water and cooked in a Goan xacuti masala built on toasted coconut, chilies and warm spice. Harvested, not bought.
How we make it
Toast coconut, dried chilies, coriander, cumin, peppercorns, cloves and cinnamon in a dry pan until fragrant and lightly golden.
Blend the toasted spices with garlic, ginger, turmeric and a splash of water into a smooth paste.
Cook sliced onion in hot oil until soft and lightly browned; stir in tomato paste if using.
Add the paste and cook 4–6 minutes until the oil separates and the masala deepens in color.
Add lobster pieces and coat well, pour in water or stock, and simmer 5–7 minutes until just cooked through.
Salt to taste, finish with cilantro and lime, and serve with rice or crusty bread.
