How we make it
Char peaches, blend with cilantro, garlic, chipotles and lime juice
Marinate rockfish at least 8 hours, ideally overnight
Roast peaches and carrots, toss with sour cream and lime juice
Sear fish hard on each side, 2 minutes max
Pour marinade over, lower heat and finish slowly
