The story

Caranguejos Recheados is a dish that beautifully encapsulates the rich culinary heritage of Goa, blending local flavors with Portuguese influences. This spicy, stuffed crab is a true testament to the vibrant culture of the coastal region.

The filling, a flavorful blend of aromatic spices like garam masala, turmeric, and amchoor, paired with onions, tomatoes, garlic, and ginger, creates a symphony of tastes that are both comforting and exotic.

Caranguejos Recheados is more than just a dish. It’s a culinary experience that transports you straight to the heart of Goa.

Method

  1. Start by boiling the Dungeness crab in a large pot of salted water. Boil until the crab is fully cooked. Allow the crab to cool slightly before carefully extracting the meat from the shell. Be sure to keep the shell intact, as you’ll be using it later for stuffing. Set the crab meat aside while you prepare the masala.

  2. In a large pan, heat about 2 tablespoons of oil over medium heat. Add the mustard seeds and cook undisturbed until they splutter and release their aromatic oils.

  3. Next, add the finely chopped onions and sauté them until they turn golden brown. Stir in the minced garlic and ginger, and cook until the fragrance fills your kitchen, 1 to 2 minutes. Now, add the chopped tomatoes, allowing them to soften and meld into the mixture stirring frequently for 5 to 7 minutes.

  4. At this point, sprinkle in the garam masala, amchoor, turmeric, salt, and a pinch of black pepper. Stir the spices into the mixture and cook until the masala thickens into a rich paste, about 10 minutes. Gently fold the crab meat into the masala, ensuring that each piece is thoroughly coated with the spiced mixture. Cook for another 5 minutes (this gives the flavors time to meld). Taste the mixture and adjust the seasoning if needed.

  5. Preheat your oven to 350°F (180°C). Spoon the prepared crab masala mixture back into the empty crab shell, packing it tightly. Finish by sprinkling a generous layer of bread crumbs on top for a crispy texture. Place the stuffed crab on a baking tray and bake for 15 to 20 minutes, or until the breadcrumbs turn a golden brown.

  6. Once baked to perfection, remove the crab from the oven and let it cool slightly before serving. Enjoy this rich, spicy dish with buttered toast or your favorite sides to soak up every bit of the flavorful sauce.
